2. Try Long Chim chef David Thompson’s top five dishes

Sydney-born David Thompson was the first chef to be awarded a Michelin star for Thai cuisine at his London restaurant Nahm, and over the past year-and-a-half he has opened three restaurants in his home country: Long Chim in Perth, Sydney and Melbourne.

Here, he shares his favourite dishes to enjoy on the menu now, and to look forward to in the future.

 

Grilled Pork: Simple and smoky and fragrant, marinated in soy and garlic and grilled over charcoal and coconut.

 

Guay jap: Rolled Noodle Soup with five-Spice and Braised Pork. A rich and comforting dish.

 

Sen gati: coconut rice noodles with prawn, pork and yellow beans. The coconut noodles are nutty, sweet and riddled with prawns, pork and bean sprouts.

 

Plaa dtat dtiaw: sun-dried trevally with green mango. The semi-dried fish with fish sauce is deep fried and covered with green mango, chillies, mint and lime.

 

Rin’s thai tea ice-cream: The tea ice-cream is made with Thai tea and condensed milk – nothing more needs to be said about it, other than that it’s a compulsory dish with which to finish the meal.

3. Go for dinner at a world-class restaurant, for a fraction of the price

Where: Momofuku Seiōbo, Sydney, NSW

The best dish on the $185 dego at Sydney’s Momofuku Seiōbo is also available at the bar… for $8. It’s called ‘busted’ roti.

It’s based on the Trinidadian dish ‘buss-up shut’ (‘busted-up shirt’): a heaving mess of butter-drenched, crisp and soft, blistered and melting, stretchy paratha.

4. Drink more gin

Where: Southern Wild Distillery, Devonport, TAS

What are you drinking if you’re not drinking gin? It’s the hottest spirit of the moment and there are some excellent choices out there, many of which are coming out of Australian distilleries.

Southern Wild Distillery in Tasmania has released a range of three gins inspired by local rivers Dasher and Fisher.

 

They’re called Mountain, Meadow and Ocean and each tell a story about the spectacular landscape surrounding the distillery.

 

You can buy it online, but we recommend visiting the distillery in person to get the full experience. (And a hot tip for cooler months – try mixing your gin with Sin-kō-nah , a delicious and complex botanical tonic syrup, but warm it up first. It’s the Antipodes’ very own hot toddy.)

5. Eat amazing plane food

Kitchen by Mike has opened its doors at Sydney Airport, within the T1 international terminal.

You can Check out Mike McEnearney’s healthy-eating, canteen-style fare by ‘dining in’, or picking up one of his customisable ‘Fly By Mike’ tray-packs to eat on the plane.

6. Go to Melbourne’s  hottest new bar

Where: Longsong, Melbourne, VIC

Longsong is opening above Longrain in Melbourne this winter.

 

Hospitality royalty John and Lisa van Haandel are behind the project, and they’ve brought along David Moyle of Hobart’s celebrated Franklin restaurant to run the food.

 

With a Thai-style grill and Australian-focused drinks list – most of which will be served out of kegs or barrels – this is set to be the place to be as the temperatures plummet.

7. Go vego for the night

Where: Yellow, Sydney, NSW

Yellow in Sydney’s Potts Point has long been lauded for its vegetarian options. But last year, head chef and co-owner Brent Savage relaunched the restaurant’s dinner menu as 100 per cent vegetarian.

Try dynamic dishes from its tasting menu – like curd, charred leek and black garlic – and you’ll see that vegetables can be just as delicious as any meat dish.

8. Visit a natural winery

Find out what natural wine is all about at Harkham Winery in the Hunter Valley.

 

Spend the day sampling the wines at the cellar door (don’t miss the seriously interesting shiraz and zesty semillon) then (if it’s a weekend) pop into the pop-up restaurant next door for a laid-back dinner of Latino-style street food as the sun sets, before heading off to bed at the on-site accommodation.

9. Get all your favourite treats at one giant bake-sale

You know all those artisan sweet treats that pepper your Instagram feed and fire up your appetite? 10. Go truffle hunting

It turns out that truffles grow extraordinarily well in Canberra. The Truffle Farm opened in 2016 and it’s so much more than a rustic homestead.

 

Go on a truffle hunt with truffle dogs Nala, Samson, Willow, Simba, Bear and Max and return to the farm for a deluxe truffle tasting.

 

Or go even more luxe after your hunt by heading to the warmth of the truffle shed for a six-course degustation prepared by ex-Emirates Wolgan Valley Resort & Spa executive chef Damian Brabender.

There’s no better place to unwind than the Yarra Valley and Dandenong Ranges – a leafy and idyllic region shrouded in mist, fern-filled gullies and a peaceful atmosphere.

Wrapped in the crisp mountain air, ancient ferns and ethereally verdant landscapes of the Yarra Valley and Dandenong Ranges , you’d be forgiven for thinking you’re in another world (or at least another part of the planet).

But this gorgeous pocket is under an hour from Melbourne, a mix of top-notch food and wine, boutique stays and forested scenery that make for an easy weekend away or even a midweek escape. From farm gates to cosy eateries, the Yarra Valley and Dandenong Ranges house a plethora of places to feast. Start your day with a leisurely brunch and coffee at Ripe . This local hangout combines warm hospitality and hearty cafe fare against a backdrop of the hills’ iconic tree-fern canopies. It’s also nestled in the heart of Sassafras, the quaint village that best captures the Dandenong Ranges’ old-world charm.

Next, take yourself on a gastronomic adventure. Visit Yarra Valley Dairy , a regional favourite doing handmade cheeses, or Cherry Hill Orchards , where in summer you can pick your own cherries and enjoy them in the farm’s picturesque grounds. Treat yourself to a tasting at one of the Yarra Valley’s renowned wineries to finish – Rochford , Re’em and De Bortoli are standout picks for a sample of the region’s signature drops.

By night, book a table at either Citrine in the mountain town of Olinda or restaurant 1309 at Balgownie Estate in the Yarra Valley. Both do elevated seasonal fare paired with excellent drinks.

And if you’re simply in the mood for a tipple, you’re spoiled for choice. The Alpine Hotel in riverside Warburton is a historic and character-filled spot pouring pints and locally made drinks, while Four Pillars is a must for gin lovers. Things to do outdoors

A motley patchwork of misty rainforest, rugged bushscapes and beautifully tended gardens, the Yarra Valley and Dandenong Ranges are some of Melbourne’s most scenic pockets. No visit to the region would be complete without a wander through its lush surrounds, either by bike or on foot.

The Ngurrak Barring trail stretches 39 kilometres through the Dandenong Ranges, connecting the towns and fern-filled forests that make the hills so unique. Along the way, be immersed in thought-provoking art installations and cultural stories, sharing a different perspective of this ancient landscape.

While in the area, wander through Cloudehill Garden & Nursery and the Dandenong Ranges Botanic Gardens , situated in Olinda. The cooler climate, rich volcanic soil and consistent rainfall offer both gardens ideal conditions for vivid and vibrant flora.

Over in the Yarra Valley, the 40-kilometre Lilydale to Warburton Rail Trail is a flat and family-friendly path perfect for leisurely bike rides and longer walks. It takes you through vine-lined scenery and towns like Seville and Wandin. Biking enthusiasts should head to the Warburton Mountain Bike Destination, a network of 160 kilometres of trails that traverse through untamed terrain.

For a more laidback outing, Alowyn Gardens encompasses seven acres of themed gardens perfect for a meandering stroll. The nearly 100-metre-long wisteria archway that connects different garden zones is a highlight – especially in October, when the lilac blossoms are in spectacular bloom.

Yarra Valley and the Dandenong Ranges are havens for arts and culture thanks to their inspiring landscapes and thriving creative community. Naturally, a slower escape should include a visit to some of the region’s best studios and galleries.

The TarraWarra Museum of Art in Healesville showcases modern and contemporary Australian art, with both a permanent collection and a rotating display of thoughtful exhibitions.
